ABOUT THIS COFFEE AND PRODUCER

This coffee is a Red Bourbon varietal, that was washed and then underwent two rounds of anaerobic fermentation inoculated with lager yeast.  The first round of anaerobic fermentation took 48 hours, while the second anaerobic fermentation took 68 hours.

This coffee is from the Cauca region of Colombia, produced by Oscar Riascos and Wilton Benitez of Granja Paraíso 92.  This lot was grown on La Macarena, one of Granja Paraíso 92’s member farms.  Oscar and Wilton work together as part of Granja Paraíso 92 — one of Colombia’s leading coffee producers in innovative processing techniques.  With their microbiology lab, quality lab, and processing plant, Granja Paraíso 92 is able to implement carefully controlled processing techniques that result in coffees that are delicious, vibrant, and one-of-a-kind.

What’s also interesting is the similarities of process and varietal with our Granja Paraiso 92 decaf that we also offer. Though not identical, the shared yeast strain and anaerobic fermentation does create interesting similarities that can be detected through its unique taste profile.

WHY WE SELECTED THIS COFFEE

At the same cupping table in Chicago where we met Wilton Benitez and sourced his intriguing Sudan Rume lot, we had the opportunity to taste this Red Bourbon, which strikingly resembled our decaf lot at the time. What sets this lot apart is its enhanced red strawberry flavors, untouched by the decaffeination process, making it a delightful companion to its decaf counterpart.

We were impressed by the clarity of the processing and how the strawberry notes evoke different sensations of creaminess versus sparkling brightness depending on the brew method. This coffee has been a joy to experiment with in both espresso and filter preparations, and we couldn't wait to share it with everyone.
